Steps
The order of ingredients is important for stability.
Place bottom and top half of bun next to each other, both facing up.
On the bottom half, place
- cheese slice, to prevent the bun from soaking up all the juices;
- then bacon.
On the top half, place
- 1–2 teaspoons of peppadews,
- then a slice of tomato,
- then cream cheese,
- then onions,
- then pickles — use them to even out and spread the cream cheese,
- then lastly the lettuce on top, curving upwards.
Your order includes one extra patty. This is your heat test patty.
Cook the patties one at a time (unless you trust yourself in the kitchen) to maintain complete control over the process.
Clean the pan and pour a small drizzle of olive oil over medium-high heat. When the oil is ready, put the test patty in the centre of the pan, dimple side down, and fry covered for 3 minutes. Turn the patty and fry covered for another 3 minutes.
Remove the patty from the pan, cut it in half and inspect — it should be charred on the outside and brown and juicy in the centre.
If it’s not perfect, adjust cooking for the rest of the patties as follows:
- If not charred outside and centre is pink: Increase the heat.
- If charred outside and centre is pink: Slightly reduce heat and increase cooking time by 30–45 seconds a side, to allow the centre to cook.
- If not charred outside and centre is brown: Slightly increase heat to allow charring.
- If charred outside, centre is brown but not juicy: Decrease cooking time by 30 seconds a side to prevent overcooking.
- If burnt outside: Reduce the heat. If centre is pink, reduce heat significantly. Make the necessary adjustments and fry the rest of the patties.
Use paper towels to clean the pan after frying each patty.
When the patty is done, place it on the bottom half of the bun as prepared earlier, drench it with sauce to your liking, then flip the top half of the bun onto the top of the patty. Hold the top half by the lettuce so it doesn’t fall apart as you flip it.
Serve each burger immediately after grilling the patty for the freshest experience.
